2 Pita Breads, Toasted and Broken into Pieces
4 Tomatoes, Diced
2 Cucumbers, Diced
1 Red Onion, Thinly Sliced
1 Fresh Mint Leaves, Chopped
1 Fresh Parsley, Chopped
1 Romaine Lettuce, Chopped
60 ml. Olive Oil
30 ml. Lemon Juice
½ tsp. Salt
½ tsp. Ground Black Pepper
1 tsp. Sumac
In a large bowl, combine the toasted pita pieces, tomatoes, cucumbers, red onion, mint, parsley, and romaine lettuce.
In a small bowl, whisk together the olive oil, lemon juice, salt, pepper, and sumac to make a dressing.
Pour the dressing over the salad and toss to combine. Serve immediately to ensure the pita pieces stay crunchy.
