Sfiha (Lebanon)

500 g. All-purpose Flour
7 g. Active Dry Yeast
1 tsp. Sugar
1 tsp. Salt
60 ml. Olive Oil
250 ml. Warm Water
500 g. Ground Lamb Or Beef
2 Tomatoes, Finely Chopped
1 Onion, Finely Chopped
2 tbsp. Tahini
1 tsp. Ground Allspice
1 tsp. Ground Cumin
1 tsp. Salt
½ tsp. Ground Black Pepper
In a large bowl, combine the flour, yeast, sugar, and salt. Add the olive oil and water, then knead until a smooth dough forms. Let the dough rest for about 1 hour, or until it doubles in size.
In another bowl, mix together the ground meat, tomatoes, onion, tahini, and spices.
Preheat your oven to 200°C. Divide the dough into small balls, then roll each ball into a flat, round shape.
Place a spoonful of the meat mixture onto each round of dough, spreading it out to the edges.
Bake the pies in the preheated oven for about 15-20 minutes, or until the edges are golden and the meat is fully cooked.
