East Asian, Main Course Lactose Free, Short Ribs Bone-In

800 g. Beef Short Ribs
75 ml. Soy Sauce
50 g. Brown Sugar
125 ml. Water
60 ml. Mirin (Japanese Sweet Rice Wine)
25 g. Garlic
125 g. Asian Pear
30 g. Green Onion
20 g. Toasted Sesame Seeds
20 ml. Sesame Oil
Black Pepper to Taste

Prepare the marinade by pureeing the Asian pear, garlic, and green onion in a food processor.

Transfer the puree to a bowl, then add soy sauce, brown sugar, water, mirin, sesame seeds, sesame oil, and black pepper.

Score the short ribs, then marinate them in the mixture for at least 3 hours, but preferably overnight.

Grill the ribs on a hot grill for 2-3 minutes on each side, or until desired doneness.

Serve with steamed rice and kimchi.
