Ingredients

Method

2 kg. Beef Bones
500 g. Beef Brisket
3 Green Onions
2 Garlic Cloves
Salt and Pepper to Taste
Cooked Rice for Serving

Rinse the beef bones under cold water, then place them in a large pot. Add enough water to cover the bones and bring to a boil. Boil for 10 minutes, then drain and rinse the bones again.

Return the bones to the pot and add the brisket, green onions, and garlic cloves. Cover with water and bring to a boil.

Reduce the heat to low and simmer for at least 6 hours, or up to 10 for a richer flavor. Skim off any scum or fat that rises to the top.

After cooking, strain the broth. Reserve the brisket and cut into thin slices.

Serve the clear broth with slices of brisket and cooked rice. Season with salt and pepper at the table according to personal taste.
