Patbingsu (Korea)

Method
Rinse the azuki beans under cold water. Place them in a large pot, add the water, and bring to a boil over high heat. Let it boil for about 5 minutes, then drain and rinse the beans again.
Return the rinsed beans to the pot and add the liter of water. Bring to a boil over high heat, then reduce the heat to low, cover the pot, and let it simmer for about 1.5 to 2 hours, or until the beans are soft enough to be easily squashed with your fingers.
Once the beans are soft, add the sugar to the pot and stir until it's fully dissolved. Continue to simmer the beans uncovered, stirring occasionally, until the mixture thickens to a paste-like consistency. If the mixture becomes too dry before it thickens, you can add a bit of water.
Once the red bean paste is ready, set it aside to cool. It can be stored in the refrigerator and used as needed.
Patbingsu
Fill a bowl or cup with a generous amount of shaved ice. Drizzle a desired amount of sweetened condensed milk over the ice.
Spoon some of the sweet red bean paste over the shaved ice.
Top with your choice of chopped fruits and pour a bit of fruit syrup or flavored syrup over the top. Serve immediately with a spoon.
Note: The preparation of sweet red beans can be made in advance and stored in the refrigerator for up to a week or can be frozen for longer storage. This sweet red bean paste can also be used for other Korean desserts like Bungeoppang (fish-shaped pastry) or Hotteok (sweet pancakes).
