Fish Ambul Thiyal (Sri Lanka)

800 g. Firm Fish, Cut into Cubes
10 g. Goraka Paste
4 g. Black Pepper
2 g. Turmeric Powder
5 g. Crushed Dried Red Chilies
10 Curry Leaves
2 Pandan Leaves
2½ g. Salt
250 ml. Water
30 ml. Coconut Oil

Marinate the fish with the goraka paste, black pepper, turmeric, crushed chilies, curry leaves, pandan leaves, and salt.

Let it sit for 30 minutes to allow the flavors to absorb.

Heat the coconut oil in a pan, then add the marinated fish and water.

Cook over medium heat until the water is almost completely absorbed and the fish is cooked through.

Check the seasoning and adjust if necessary.

Serve hot with rice.
