Sel Roti (Nepal)

500 g. Rice Flour
100 g. Sugar
2 g. Baking Powder
100 ml. Milk
500 ml. Vegetable Oil for Frying
Mix the rice flour, sugar, baking powder, and milk in a bowl to form a semi-thick batter.
Let the batter rest for about 2 hours.
Heat the vegetable oil in a deep frying pan.
Using a piping bag or a ziplock bag with a hole cut at one corner, pipe the batter into the hot oil in a circular shape.
Fry the sel roti until it turns golden brown on both sides, turning it occasionally.
Remove from the oil and drain on paper towels.
Serve warm or at room temperature.
