Chicken Adobo (Philippines)

1 kg. Chicken, Cut into Pieces
125 ml. Soy Sauce
125 ml. White Vinegar
200 ml. Water
3 Garlic Cloves, Crushed
2 Bay Leaves
5 g. Black Peppercorns
30 ml. Vegetable Oil
30 g. Sugar
In a bowl, marinate the chicken in the soy sauce, vinegar, and garlic for at least an hour, but preferably overnight.
Heat the vegetable oil in a pot over medium heat. Add the sugar and caramelize it until it turns amber.
Add the marinated chicken to the pot, reserving the marinade. Brown the chicken on all sides.
Pour the reserved marinade, water, bay leaves, and peppercorns into the pot. Bring the liquid to a boil, then reduce the heat and simmer for about 30 minutes, or until the chicken is cooked through and the sauce is reduced.
Serve the chicken adobo with steamed rice.
