Pancit (Philippines)

500 g. Pancit Canton Noodles
250 g. Chicken Breast
250 g. Shrimp, Peeled and Deveined
2 Carrots, Julienned
200 g. Cabbage, Shredded
1 Onion, Sliced
3 Garlic Cloves, Minced
60 ml. Soy Sauce
1 l. Chicken Broth
30 ml. Vegetable Oil
2 Green Onions, Chopped
1 Lemon, Cut into Wedges

In a large pan, heat the vegetable oil over medium heat. Add the garlic and onions and sauté until they become aromatic.

Add the chicken and shrimp to the pan and cook until they are fully cooked. Remove the chicken and shrimp from the pan and set aside.

In the same pan, add the carrots and cabbage and sauté until they are slightly softened. Remove the vegetables from the pan and set aside.

In the same pan, add the chicken broth and bring it to a boil. Add the pancit canton noodles and cook according to the package instructions.

Once the noodles are cooked, add the cooked chicken, shrimp, and vegetables back into the pan. Add the soy sauce and mix well.

Garnish with chopped green onions and serve with lemon wedges on the side.
