800 g. Fresh Fish Fillets
2 Onions, Finely Chopped
2 Garlic, Minced
1 Scotch Bonnet Pepper, Finely Chopped
4 Banana Leaves
1 tbsp. Palm Oil
Salt and Pepper to Taste
Season the fish fillets with salt, pepper, onions, garlic, and scotch bonnet pepper.
Heat the palm oil in a pan and lightly fry the fish on both sides.
While the fish is frying, prepare the banana leaves by heating them over a flame until they become flexible.
Place each fish fillet in the center of a banana leaf. Fold the leaf around the fish to create a parcel.
Steam the parcels for about 20 minutes in a bamboo steamer, or bake them in a preheated oven at 180°C (356°F) for about 30 minutes.
Serve the fish in the banana leaf parcels for an authentic experience.
