Loso na Madesu

400 g. Short-grain Rice
400 g. Black-eyed Peas
1 Onion, Chopped
2 Garlic, Minced
2 l. Water
Salt and Pepper to Taste
Rinse the black-eyed peas and soak them in water overnight.
Drain the beans and place them in a large pot with the onion, garlic, and water.
Bring to a boil, then reduce heat to low and let simmer for about 2 hours, or until the beans are tender.
In the meantime, rinse the rice under cold water until the water runs clear.
Cook the rice according to package instructions.
Once both the beans and rice are cooked, mix them together in a large pot. Season with salt and pepper.
Serve hot with fried plantains or a side of greens.
