Muamba Nsusu

500 g. Chicken, Cut into Pieces
200 g. Raw Peanuts
1 Onion, Chopped
2 Garlic, Minced
1 Scotch Bonnet Pepper, Finely Chopped
1½ l. Water
Salt and Pepper to Taste
Roast the peanuts in a dry pan until golden brown. Let them cool, then grind them into a paste.
In a large pot, add the chicken, onion, garlic, scotch bonnet pepper, and water. Bring to a boil.
Reduce the heat to low and simmer for about 1 hour, or until the chicken is tender.
Stir in the peanut paste and continue to simmer for another 30 minutes.
Season with salt and pepper. Serve hot.
