400 g. Red Kidney Beans
1 Onion, Chopped
2 Garlic, Minced
1 Scotch Bonnet Pepper, Finely Chopped
2 tbsp. Palm Oil
1½ l. Water
Salt and Pepper to Taste

Rinse the beans and soak them in water overnight.

Drain the beans and place them in a large pot. Add the onion, garlic, scotch bonnet pepper, palm oil, and water.

Bring to a boil, then reduce the heat to low and let simmer for about 2 hours, or until the beans are tender.

Season with salt and pepper. Serve hot with cassava, rice, or plantains.
