South African, Main Course, Minced Beef

500 g. Lean Minced Beef
2 Large Onions, Finely Chopped
2 Garlic, Minced
15 ml. Curry Powder
5 ml. Ground Turmeric
5 ml. Ground Coriander
5 ml. Ground Cumin
2 Eggs
50 g. Bread Slices, Crusts Removed
200 ml. Milk
60 g. Sultanas
50 g. Blanched Almonds, Chopped
1 Lemon, Zest Grated
60 ml. Chutney
6 Bay Leaves
Salt and Pepper to Taste

Preheat the oven to 180°C.

Soak the bread in half of the milk.

Fry the onions and garlic in a pan until golden. Add the curry powder, turmeric, coriander, and cumin and cook for 2 more minutes.

Add the minced beef to the pan and brown it.

Squeeze out the milk from the bread, reserving the milk, and mix the bread with the beef.

Stir in the sultanas, almonds, lemon zest, and chutney. Season with salt and pepper.

Spoon the mixture into a greased baking dish and flatten the top. Arrange the bay leaves on top.

Beat the reserved milk, the remaining milk, and the eggs together and pour over the meat.

Bake for 40 minutes, until the topping is set and golden.
