Biltong

1 kg Beef Silverside
30 g Coarse Salt
20 g Coarsely Ground Black Pepper
20 g Coarsely Ground Coriander Seeds
125 ml Brown Vinegar
50 g Brown Sugar

Cut the meat into strips about 2.5 cm thick.

Mix the salt, pepper, coriander seeds, vinegar, and sugar in a bowl to create the marinade.

Dip the meat strips into the marinade, making sure they are thoroughly coated.

Place the strips on a tray and let them marinate in the refrigerator for 24 hours.

Hang the strips in a cool, well-ventilated area to dry for about 2 weeks, or until they have reached your preferred level of dryness.
