1 kg. Beef Silverside
30 g. Coarse Salt
20 g. Coarsely Ground Black Pepper
20 g. Coarsely Ground Coriander Seeds
125 ml. Brown Vinegar
50 g. Brown Sugar
Cut the meat into strips about 2.5 cm thick.
Mix the salt, pepper, coriander seeds, vinegar, and sugar in a bowl to create the marinade.
Dip the meat strips into the marinade, making sure they are thoroughly coated.
Place the strips on a tray and let them marinate in the refrigerator for 24 hours.
Hang the strips in a cool, well-ventilated area to dry for about 2 weeks, or until they have reached your preferred level of dryness.
