South African, Main Course Gluten Free Lactose Free, Minced Beef Minced Pork

Boerewors

1 kg. Coarsely Minced Beef
500 g. Coarsely Minced Pork
150 g. Pork Fat, Cubed
20 g. Coriander Seeds, Coarsely Ground
2 Garlic, Finely Minced
15 ml. Salt
2 g. Ground Black Pepper
½ g. Ground Cloves
½ g. Ground Nutmeg
125 ml. Cider Vinegar
90 g. Natural Hog Casings

Soak the hog casings in warm water for about 30 minutes.

In a large bowl, combine the minced beef, minced pork, pork fat, coriander seeds, garlic, salt, black pepper, ground cloves, ground nutmeg, and cider vinegar.

Rinse the hog casings under running water.

Using a sausage stuffer, stuff the meat mixture into the hog casings and twist the sausages at regular intervals.

Let the sausages dry overnight in the refrigerator.

Grill the boerewors on a barbecue, turning frequently until cooked through.
