Potjiekos

Method

1 kg. Beef (Chuck Or Shank), Cubed
2 Onions, Chopped
2 Garlic, Minced
300 g. Potatoes, Peeled and Quartered
300 g. Carrots, Peeled and Sliced
250 g. Green Beans, Trimmed and Cut into Pieces
200 g. Sweetcorn Kernels
1 Green Pepper, Chopped
500 ml. Beef Stock
15 ml. Curry Powder
5 ml. Dried Thyme
Salt and Pepper to Taste
30 ml. Vegetable Oil

Heat the oil in the potjie over a medium heat.

Add the onions and garlic and cook until soft.

Add the beef cubes and brown them on all sides.

Sprinkle the curry powder and thyme over the meat and stir well.

Pour in the beef stock and bring it to a simmer.

Arrange the potatoes, carrots, green beans, sweetcorn, and green pepper in layers over the meat. Do not stir.

Cover the potjie and let it simmer for about 2 hours.

Check the potjie occasionally and add more stock or water if necessary.

Season with salt and pepper and cook for another 30 minutes.

10. The Potjiekos is ready when all the vegetables are tender. Be careful not to stir the pot too often as the aim is for the ingredients to cook in layers.

Serve the potjiekos hot, straight from the potjie.
