Chakalaka

Serves 4

Ingredients

Method

2 Onions, Chopped
2 Garlic, Minced
2 Carrots, Grated
1 Green Pepper, Chopped
1 Red Pepper, Chopped
2 Tomatoes, Chopped
410 g. Canned Baked Beans In Tomato Sauce
30 ml. Curry Powder
2 Chillies, Chopped
30 ml. Vegetable Oil
Salt and Pepper to Taste

Heat the vegetable oil in a large pan and sauté the onions until they're soft and translucent.

Add the garlic, curry powder, and chillies to the pan and sauté for a couple more minutes.

Add the grated carrots and chopped peppers to the pan and cook until they're soft.

Add the chopped tomatoes and simmer until they are cooked down and form a nice sauce.

Add the baked beans, season with salt and pepper, and simmer for another 5 minutes. The chakalaka is ready to serve with your choice of main dish.
