Peri Peri Chicken

1 Whole Chicken, Spatchcocked
125 ml. Lemon Juice
125 ml. Vegetable Oil
5 Garlic, Minced
30 g. Peri-peri Chilies, Chopped
10 g. Paprika
10 g. Oregano
5 g. Salt

In a bowl, combine lemon juice, vegetable oil, minced garlic, chopped peri-peri chilies, paprika, oregano, and salt. This is your peri-peri marinade.

Place the chicken in a dish and pour the marinade over it. Ensure it is thoroughly covered. Let it marinate for at least 3 hours, but ideally overnight.

Preheat a grill or oven to 200°C.

Cook the chicken skin-side down first for 15 minutes, then flip and cook for another 25-30 minutes, or until fully cooked and juices run clear. Baste the chicken with the remaining marinade throughout the grilling process.

Let the chicken rest for a few minutes before serving.
