Malva Pudding

200 g. White Sugar
2 Eggs
20 g. Apricot Jam
210 g. All-purpose Flour
10 g. Baking Soda
2½ g. Salt
30 g. Butter
15 ml. Vinegar
125 ml. Milk
250 ml. Heavy Cream
150 g. White Sugar
125 ml. Hot Water
15 ml. Vanilla Extract

Preheat your oven to 180°C and grease a baking dish.

Beat sugar and eggs together until fluffy, then beat in the apricot jam.

In a separate bowl, sift together the flour, baking soda, and salt.

Melt the butter in a small saucepan and add the vinegar and milk.

Alternately add the dry ingredients and the milk mixture to the egg mixture, mixing until combined.

Pour the batter into the prepared baking dish and bake for about 45 minutes.

In a new saucepan, combine the cream, sugar, hot water, and vanilla extract. Stir until the sugar is dissolved.

Pour the sauce over the hot pudding as soon as it comes out of the oven. Let it sit until the sauce is absorbed.
