South African, Side Dish Vegan Gluten Free Lactose Free Nut Free, Maize Meal

Pap en Sous

500 g. Maize Meal
1 l. Water
2 Tomatoes, Chopped
1 Onion, Chopped
15 ml. Vegetable Oil
5 g. Curry Powder
2½ g. Paprika
Salt and Pepper to Taste

Bring water to a boil in a large pot, then slowly add the maize meal, stirring continuously.

Reduce heat to low, cover, and cook for 30 minutes, stirring occasionally until the pap is cooked and thickened.

3. While the pap is cooking, prepare the sous (sauce). Heat oil in a pan, then add the chopped onions and sauté until soft.

Add the tomatoes, curry powder, and paprika to the onions. Stir well and simmer for 15-20 minutes until the tomatoes have broken down and the sauce has thickened.

Season the sauce with salt and pepper to taste.

Serve the cooked pap with the tomato and onion sauce on top.
