Durban Mutton Curry

500 g. Mutton Shoulder, Cubed
2 Onions, Finely Chopped
2 Garlic, Minced
20 g. Curry Powder
5 g. Turmeric
5 g. Ground Coriander
5 g. Ground Cumin
1 Tomato, Chopped
1 l. Beef Or Mutton Stock
30 ml. Vegetable Oil
Salt to Taste
Heat oil in a large pot, add the onions and garlic, and sauté until golden.
Add the curry powder, turmeric, coriander, and cumin, and cook for another minute.
Add the mutton to the pot and brown on all sides.
Add the chopped tomato and the stock, cover and let it simmer for about 2 hours until the mutton is tender.
Season with salt to taste and serve the curry with rice or bread.
