North African, Lite Bite Vegetarian Gluten Free Nut Free, Eggs

Shakshuka

2 tbsp. Olive Oil
1 Onion, Sliced
1 Red Bell Pepper, Sliced
2 Garlic Cloves, Minced
1 tsp. Ground Cumin
1 tsp. Paprika
500 g. Canned Tomatoes
4 Eggs
Salt and Pepper to Taste

Heat olive oil in a frying pan over medium heat. Add the onion and bell pepper and sauté until softened.

Add the garlic, cumin, and paprika, and sauté until fragrant.

Add the tomatoes and simmer until the sauce thickens.

Make wells in the sauce and break an egg into each well. Cover the pan and cook until the eggs are done to your liking.

Season with salt and pepper before serving.
