500 g. Dried Fava Beans
1 tsp. Cumin
2 tbsp. Olive Oil
1 Large Lemon, Juiced
2 Garlic Cloves, Minced
Salt and Pepper to Taste
Parsley, Chopped (For Garnish)
Soak the dried fava beans overnight in plenty of water.
Drain the beans and place them in a pot. Cover with fresh water and bring to a boil.
Reduce the heat to low, cover the pot, and let it simmer until the beans are tender, about 2 hours. You may need to add more water during cooking to keep the beans covered.
Once the beans are cooked, drain them and mix in the cumin, olive oil, lemon juice, and garlic. Season with salt and pepper to taste.
Garnish with chopped parsley before serving.
