150 g. Dried Chickpeas
100 g. Green Lentils
200 g. Lamb, Diced
1 Onion, Chopped
2 Garlic Cloves, Minced
2 Celery Sticks, Diced
500 g. Canned Tomatoes
1 tsp. Ground Cumin
1 tsp. Ground Coriander
1 tsp. Turmeric
Pinch of Saffron
1 tsp. Ground Cinnamon
2 tbsp. Chopped Fresh Parsley
2 tbsp. Chopped Fresh Cilantro
1½ l. Water
2 tbsp. Olive Oil
Salt and Pepper to Taste
Soak the dried chickpeas overnight in plenty of water.
Heat the olive oil in a large pot over medium heat. Add the onion, garlic, and celery, and sauté until soft.
Add the lamb and cook until browned.
Drain the chickpeas and add them to the pot along with the lentils, tomatoes, spices, herbs, and water.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about an hour, or until the lentils and chickpeas are cooked and the soup has thickened.
Season with salt and pepper before serving.
