1 kg. Lamb Shoulder, Ground
100 g. Beef Suet, Ground
5 Garlic Cloves, Minced
2 tbsp. Harissa Paste
1 tbsp. Ground Cumin
1 tbsp. Ground Coriander
1 tbsp. Paprika
1 tsp. Cayenne Pepper
1 tsp. Salt
1 tsp. Black Pepper
Hog Casings

In a large bowl, combine all ingredients except the hog casings. Mix until well combined.

Rinse the hog casings in warm water and keep them in a bowl of warm water.

Stuff the meat mixture into the hog casings and twist to form sausages.

Grill the sausages over medium heat until cooked through, about 10-15 minutes.
