North African, Main Course Vegetarian Nut Free, Pastry (Filo)

500 g. Phyllo Dough
200 g. Feta Cheese, Crumbled
200 g. Spinach, Chopped
2 Eggs, Beaten
100 ml. Olive Oil
Salt and Pepper to Taste

Preheat the oven to 180°C.

In a bowl, combine feta cheese, spinach, eggs, salt, and pepper.

Brush a sheet of phyllo dough with olive oil, place some of the spinach and cheese mixture on it, then roll it up. Repeat with the remaining phyllo and filling.

Place the rolls on a baking sheet, brush with more olive oil, and bake for about 15-20 minutes, or until golden and crispy.

Allow them to cool slightly before serving.
