Method

1 Whole Chicken
2 Lemons, Juiced
2 Garlic Cloves, Minced
1 tsp. Ground Cumin
1 tsp. Paprika
1 tsp. Ground Ginger
½ tsp. Saffron Threads
100 ml. Olive Oil
Salt and Pepper to Taste

In a large bowl, mix together lemon juice, garlic, cumin, paprika, ginger, saffron, olive oil, salt, and pepper to create a marinade.

Place the chicken in the marinade and coat thoroughly. Allow the chicken to marinate in the fridge for at least 2 hours, or overnight.

Preheat the oven to 180°C. Place the chicken in a roasting pan and pour over any remaining marinade.

Roast the chicken in the oven for about 1.5-2 hours, or until the chicken is cooked through and the skin is crispy.

Allow the chicken to rest for a few minutes before carving and serving.
