Berber Omelette

6 Eggs
4 Tomatoes, Chopped
2 Onions, Chopped
2 Green Bell Peppers, Chopped
2 Garlic Cloves, Minced
1 tsp. Paprika
1 tsp. Cumin
50 ml. Olive Oil
Salt and Pepper to Taste

In a tagine or large pan, heat the olive oil and sauté the onions, bell peppers, and garlic until soft.

Add the tomatoes, spices, salt, and pepper. Cover and simmer until the tomatoes are broken down into a sauce and the flavors have melded together, about 20 minutes.

Make wells in the sauce and crack the eggs into them. Cover and cook until the eggs are done to your liking.

Serve the Berber omelette hot from the tagine, with bread for dipping.
