Sukuma Wiki

2 tbsp. Vegetable Oil
1 Onion, Chopped
2 Garlic Cloves, Minced
3 Tomatoes, Chopped
1 kg. Collard Greens Or Kale, De-stemmed and Chopped
1 tsp. Salt
½ tsp. Black Pepper
Heat the vegetable oil in a large pan over medium heat.
Add the onion and cook until it's soft and translucent, about 5 minutes.
Add the garlic and cook for another minute, until it's fragrant.
Add the tomatoes, collard greens or kale, salt, and black pepper. Stir well to combine.
Cover the pan and let it cook for about 10-15 minutes, until the greens are tender.
Serve the Sukuma Wiki hot, ideally with a side of Ugali.
