East African, Dessert Vegetarian Nut Free

Mandazi

2 cups All-purpose Flour
½ cup Sugar
1 tsp. Baking Powder
½ tsp. Baking Soda
½ tsp. Cardamom Powder
½ cup Coconut Milk
1 Egg
1 l. Vegetable Oil, for Deep Frying

In a large bowl, mix together the flour, sugar, baking powder, baking soda, and cardamom powder.

In another bowl, whisk together the coconut milk and egg.

Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.

Knead the dough for a few minutes until it is smooth and elastic.

Cover the dough and let it rest for 30 minutes.

Divide the dough into pieces and roll each piece into a ball. Flatten the balls into discs.

Heat the oil in a deep pan over medium heat.

Fry the mandazi a few at a time, turning them occasionally, until they are golden brown on all sides.

Drain the mandazi on paper towels and serve them warm.
