1 kg. Potatoes, Peeled and Chopped
1 cup Fresh Or Frozen Peas
1 cup Fresh Or Frozen Corn Kernels
2 tbsp. Butter
Salt and Pepper to Taste
Place the potatoes in a large pot and cover with water. Bring to a boil and cook until the potatoes are tender, about 15-20 minutes.
While the potatoes are boiling, cook the peas and corn in another pot of boiling water until they are tender, about 5 minutes. Drain and set aside.
Drain the potatoes and return them to the pot. Add the butter, salt, and pepper.
Mash the potatoes until they are smooth and creamy.
Stir in the cooked peas and corn until well combined.
Serve the Irio warm, ideally with a side of Nyama Choma.
