2 cups Dried Corn Kernels
2 cups Dried Beans (Such As Kidney Beans Or Black-eyed Peas
1 tbsp. Vegetable Oil
1 Onion, Chopped
2 Garlic Cloves, Minced
2 Tomatoes, Chopped
1 Green Bell Pepper, Chopped
1 tsp. Paprika
Salt and Pepper to Taste
Rinse the corn and beans under cold water.
Place the corn and beans in a large pot and cover with water. Bring to a boil and cook until they are tender, about 1-2 hours. Add more water as needed.
Once the corn and beans are cooked, drain them and set aside.
Heat the oil in a large pan over medium heat. Add the onion and cook until it is soft and starting to brown.
Add the garlic to the pan and cook for another minute, until it's fragrant.
Add the tomatoes, bell pepper, and paprika to the pan. Cook until the vegetables are tender.
Add the cooked corn and beans to the pan and stir well to combine.
Season with salt and pepper to taste.
Serve the Githeri hot, as is or with a side of chapati or rice.
