Matoke

Ingredients

Method

1 kg. Plantains, Peeled and Sliced
2 tbsp. Vegetable Oil
1 Onion, Chopped
2 Garlic Cloves, Minced
1 Chili Pepper, Chopped
2 Tomatoes, Chopped
1 cup Vegetable Broth
Salt to Taste

Heat the oil in a large pan over medium heat. Add the onion and cook until it's soft and starting to brown.

Add the garlic and chili pepper to the pan and cook for another minute, until it's fragrant.

Add the tomatoes to the pan and cook until they are soft and starting to break down.

Add the sliced bananas to the pan and stir well to combine. Cook for a few minutes until the bananas start to soften.

Add the vegetable broth to the pan and season with salt to taste. Stir well.

Cover the pan and let it simmer for about 20 minutes, until the bananas are tender and the sauce has thickened.

Serve the Matoke hot, as is or with a side of rice or chapati.
