Misir Wot

2 cups Red Lentils
3 tbsp. Vegetable Oil
1 Onion, Chopped
2 Garlic Cloves, Minced
1 tbsp. Fresh Ginger, Grated
2 tbsp. Berbere Spice
1 Can of Tomato Paste (150 Grams)
4 cups Water
Salt to Taste
Rinse the lentils under cold water until the water runs clear. Set aside.
Heat the oil in a large pan over medium heat. Add the onion and cook until it is soft and starting to brown.
Add the garlic, ginger, and berbere spice to the pan and cook for a few more minutes until fragrant.
Add the tomato paste to the pan and stir well to combine.
Add the rinsed lentils to the pan, followed by the water. Stir well to combine.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, until the lentils are tender and the sauce has thickened.
Season with salt to taste. Serve the Misir Wot hot, ideally with a side of injera.
