Efo Riro

Method

400 g. Spinach, Washed and Chopped
200 g. Beef (Chuck Or Shank) Or Mutton, Cut into Chunks
200 g. Smoked Fish (Such As Mackerel)
200 g. Shrimps
100 ml. Palm Oil
1 Large Onion, Chopped
2 Red Bell Peppers, Blended
3 Tomatoes, Blended
2 Scotch Bonnet Peppers, Blended
1 l. Water Or Stock
2 g. Salt
1 g. Locust Bean (Optional)

Season the beef with salt and cook in a pot with water until tender.

In a large pot, heat the palm oil and sauté the chopped onions until translucent.

Add the blended peppers and tomatoes to the pot, then cook until the mixture thickens.

Add the cooked beef, smoked fish, shrimps, and locust bean if using. Allow to simmer for 10 minutes.

Finally, add the spinach and cook for another 5 minutes.

Serve the Efo Riro hot with fufu or pounded yam.
