200 g. Black-eyed Beans
100 ml. Palm Oil
1 Onion, Chopped
2 Scotch Bonnet Peppers, Chopped
2 Tomatoes, Chopped
2 g. Salt
1 l. Water
Soak the beans overnight, then drain.
Heat the palm oil in a large pot, then add the onions, peppers, and tomatoes, and cook until the onions are translucent.
Add the beans, salt, and water, then bring to a boil.
Reduce the heat and simmer for about 1 hour, or until the beans are soft.
Serve the Red Red hot, often accompanied by fried plantains.
