West African, Main Course Pescatarian Nut Free, Gari (Cassava Grits)

200 g. Gari (Fermented and Roasted Cassava Grits)
2 Large Onions, Chopped
2 Tomatoes, Chopped
2 Bell Peppers, Chopped
4 Eggs
100 ml. Palm Oil
200 g. Smoked Fish (Such As Mackerel), Deboned
500 ml. Water
2 g. Salt
1 g. Black Pepper
100 g. Green Peas

Heat the palm oil in a large pot and sauté the onions until they're translucent.

Add the tomatoes and bell peppers, then cook until they're soft.

Break the eggs into the pot and stir until they're scrambled and cooked.

Add the smoked fish, gari, water, salt, and black pepper, then stir until everything is well combined.

Add the green peas, then cover the pot and cook for about 10 minutes, or until the water is absorbed and the gari is soft.

Serve the Gari Foto hot, as a main course.
