120 g. Self-raising Flour
120 g. Caster Sugar
120 g. Butter
2 Large Eggs
1 tsp. Vanilla Extract
100 g. Dark Chocolate
150 g. Desiccated Coconut

Preheat your oven to 180 degrees Celsius.

In a bowl, mix the flour, sugar, butter, eggs, and vanilla extract until smooth.

Pour the mixture into a baking pan and bake for 20 minutes, or until a skewer comes out clean.

Allow the sponge cake to cool, then cut into squares.

Melt the dark chocolate in a bowl over simmering water.

Dip each square of sponge cake into the melted chocolate, then roll in the desiccated coconut. Allow to set before serving.
