6 Large Egg Whites
350 g. Caster Sugar
1 tsp. White Vinegar
1 tsp. Cornflour
300 ml. Whipping Cream
250 g. Mixed Berries
Preheat your oven to 150 degrees Celsius.
Beat the egg whites until stiff peaks form.
Gradually add the sugar, one spoonful at a time, while continuously beating the egg whites.
Fold in the vinegar and cornflour.
Spread the meringue mixture onto a baking paper-lined tray and shape into a disk.
Reduce the oven temperature to 120 degrees Celsius and bake for 1.5 hours.
Allow the meringue to cool completely in the oven.
Whip the cream and spread it over the cooled meringue.
Top with the mixed berries before serving.
