Method
Preheat your oven to 170 degrees Celsius and line a baking tray with parchment paper.
In a large bowl, combine the rolled oats, flour, sugar, and desiccated coconut.
In a saucepan over medium heat, melt the butter and golden syrup together.
In a separate bowl, combine the baking soda and boiling water, then add this to the butter and syrup mixture.
Pour the wet mixture into the dry ingredients and stir until fully combined.
Using your hands, roll tablespoons of the mixture into balls and place on the lined baking tray, leaving space for them to spread.
Flatten slightly with the back of a spoon and bake in the preheated oven for 15-20 minutes, or until golden brown.
Allow the biscuits to cool on the tray for 10 minutes before transferring to a wire rack to cool completely.
