Hokey Pokey Ice Cream (New Zealand)

1 l. Vanilla Ice Cream
100 g. Sugar
5 tbsp. Golden Syrup
2 tsp. Baking Soda
To make the hokey pokey, heat the sugar and golden syrup in a saucepan over low heat, stirring until the sugar dissolves.
Increase the heat to medium and cook without stirring until the mixture turns a golden caramel color.
Remove from heat, add the baking soda, and stir quickly until the mixture froths up.
Pour the mixture onto a greased tray and leave to cool and harden. Once hardened, break it into small pieces.
Soften the vanilla ice cream slightly, then stir in the hokey pokey pieces. Refreeze until firm.
