Whitebait Fritter (New Zealand)

200 g. Whitebait
4 Eggs
Salt and Pepper to Taste
2 tbsp. Butter
Lemon Wedges for Serving

Rinse the whitebait in cold water and pat dry with paper towels.

In a bowl, lightly beat the eggs and season with salt and pepper.

Stir the whitebait into the eggs.

Heat the butter in a frying pan over medium heat.

Pour spoonfuls of the whitebait and egg mixture into the pan and cook until set on the bottom, then flip and cook the other side until golden and crispy.

Serve the whitebait fritters with lemon wedges on the side.
