Sago Porridge

200 g. Sago Pearls
1 l. Water
1 Ripe Banana, Mashed (Optional)
200 ml. Coconut Milk (Optional)
Sugar to Taste

In a large bowl, soak the sago pearls in water for about 2 hours until they swell up and absorb the water.

Drain the soaked sago pearls.

In a large pot, bring the water to a boil. Gradually add the soaked sago pearls, stirring continuously to prevent them from sticking together.

Reduce the heat to low and simmer, stirring occasionally, for about 15-20 minutes until the sago pearls become translucent and the mixture thickens into a porridge-like consistency.

Optionally, you can add mashed bananas or coconut milk for additional flavor. If using, add them at this stage and cook for a further 5-10 minutes, stirring regularly.

Sweeten the porridge with sugar to taste.

Serve the sago porridge hot or allow it to cool and set. The cooled porridge can be cut into slices and eaten as a snack.
