Kaukau (Papua New Guinea)

1 kg. Kaukau (Sweet Potatoes)
Salt to Taste
Butter, Optional
Rinse the kaukau under cold water and pat dry.
If boiling, place the kaukau in a large pot and cover with water. Bring to a boil and simmer until tender. Season with salt and serve hot with optional butter.
If roasting, preheat your oven to 200 degrees Celsius. Cut the kaukau into wedges and toss with a little oil and salt. Arrange on a baking tray and roast until golden and crispy.
