Haupia

Method
400 ml. Coconut Milk
50 g. Sugar
50 g. Arrowroot
120 ml. Water
In a saucepan, combine the coconut milk and sugar. Heat over medium heat until the sugar is completely dissolved.
In a separate bowl, dissolve the arrowroot powder in water.
Slowly pour the arrowroot mixture into the saucepan, stirring constantly.
Continue to cook the mixture over medium heat, stirring constantly, until it thickens to a pudding-like consistency.
Pour the mixture into a greased pan or mold and smooth the surface with a spatula.
Let the haupia cool at room temperature, then refrigerate it until it's set and firm, usually about 2 hours.
Once set, cut the haupia into squares and serve.
