450 g. Self Raising flour
225 g. Demerara Sugar or Soft Brown Sugar
225 g. Raisins
2 cups Cups of Cold Tea
50 g. Butter
1 Egg
1 tsp. Mixed Spice

Soak the sugar and fruit in 2 cups of black tea overnight.

Pre heat the oven 350ºF / 180º C

Add the mixed spice to the flour and rub in the butter with your finger tips.

Beat the egg and add to the mixture. Then stir in the soaked fruit and sugar mixture.

Grease an oblong loaf tin and fill with the mixture.

Bake in a pre-heated moderate oven 350º F / 180º C for about one and a half hours . Check after one hour 15 mins just in case.

Serve sliced and buttered.
