South American, Main Course Vegan Gluten Free Lactose Free Nut Free, Coriander (Dried)

Chimichurri Sauce

Serves 4

Ingredients

Method

60 g. Coriander (Dried)
55 g. Small pack of Parsley
2 Garlic Cloves
1 Small Sweet Onion
1 Green Chilli
5 tbsp. Extra Virgin Olive Oil
2 tbsp. Red Wine Vinegar

Finely chop the coriander and parsley.

Finely chop or crush the garlic.

Finely dice the onion.

Deseed the chilli and finely chop. If you do not have a fresh chilli you can use a teaspoon of dried chilli flakes.

Measure 5 tablespoons of extra virgin olive oi

Measure 2 tablespoons of red wine vinegar ( Sauvignon blanc vinegar or rice wine vinegar work well in this recipe too).

Mix all the ingredients in a bowl and season to taste.

Enjoy with Steak or grilled meats.
