Traditional British, Sweet Treat Vegetarian Nut Free

Christmas Muffins

170 g Mincemeat
110 g Currants
1 Egg
75 g Castor Sugar
75 g Butter
125 g Self Raising flour
1 tsp Allspice
1 tbsp Brandy
5 g Icing Sugar for dusting

Preheat the oven to 150ºC/300ºF.

Place 12 Muffin cases in a Muffin tin. If you haven’t got paper cases just butter your muffin tin well and they will cook just as well.

Place all the ingredients in a bowl and mix together thoroughly until light and fluffy.

Portion out the mixture into the cake cases and place in the oven for 20-25 minutes.

Allow to cool on a wire rack and dust with icing sugar to serve.

These can be served warm by microwaving them for a few seconds and can also be frozen.
