Meatballs in Almond Sauce

Method

450 g. Minced Beef
1 Egg
1 Cloves of Garlic
15 g. Parsley
2 Slices of Stale Bread
140 g. White Breadcrumbs
1 tsp. Kosher Salt
½ l. Sunflower Oil
12 Almonds
2 Garlic Cloves
1 Slice of Stale Bread
2 Fresh Tomatoes
150 ml. Water
2 tbsp. Olive Oil
1 Bay Leaf

Begin by making the meatballs.

First place the two slices of bread in a bowl of water and leave to soak for a short while.Drain and squeeze off excess water.

In a separate bowl, beat the egg, add the crushed garlic, parsley, minced meat and bread, season and mix thoroughly together.

Now take pieces of the mixture using your hands (about a tablespoon at a time)and roll each into a small round ball. Coat each ball with breadcrumbs and brown by frying them in a large frying pan in half a litre of oil.

For the Sauce

Fry Almonds, garlic and bread until brown in a little olive oil. Blend these ingredients with the tomatoes and a glass of water. Transfer mixture to a casserole together with the browned meatballs and cook with a lid on for 15 minutes or until sauce has thickened.

Serve with Pasta of choice, rice or french fries.
